Landscapes are the classic jigsaw subject and still the best argument for a big piece count. A forest floor or a mountain ridge gives you endless small variation to work with, so a 1000-piece puzzle stays readable the whole way through. Watch for skies: a cloudless blue stretch across the top of a landscape is where most of the difficulty hides, and it is worth saving for last.
