Landscapes are the classic jigsaw subject and still the best argument for a big piece count. A forest floor or a mountain ridge gives you endless small variation to work with, so a 1000-piece puzzle stays readable the whole way through. Watch for skies: a cloudless blue stretch across the top of a landscape is where most of the difficulty hides, and it is worth saving for last.
Build the horizon first. It is the one line that runs the full width of most landscapes, and it splits the puzzle into a sky half and a ground half you can then treat separately. The ground will fall into place quickly; the sky is the puzzle. If you want a landscape that stays interesting at 1000 pieces, choose one where trees or rock reach into the upper third and break the sky up.
